Pineapple Zucchini Cake

My kitchen has been VERY happy lately. Since we're trying to save money and not eat out as much, I've been trying to reduce my trips to the store and eat out of our pantry and freezer. So, our kitchen has been a happy, busy place.

Our zucchini plants are finally slowing down, but I still have a lot of picked ones. I'm always looking for good zucchini recipes, especially this time of year when I'm all "zucchini'd out" and need a change from the standard breads and side dishes. And let me tell you...I found a keeper! It's Pineapple Zucchini Cake from Pioneer Woman's Tasty Kitchen blog.

I made a few tweaks and it was oh, so yummy! Sweet and moist...just like a cake should be. If you still have zucchini coming out of your ears, I highly recommend this cake!


CAKE:
1-½ cups all-purpose flour
1-¼ cups sugar
½ cup sweetened, flaked coconut
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/8 teaspoons nutmeg
¼ cup oil
2 eggs
1 teaspoon vanilla
2 cups grated zucchini
1 (20 oz.) can crushed pineapple in juice, drained (reserve juice for frosting)

Preheat oven to 350°F.

Combine flour, sugar, coconut, baking soda, salt, and spices in a large bowl; stir well and set aside.

In an electric mixer fitted with a paddle attachment, combine oil, eggs, and vanilla; mix well. Add grated zucchini and pineapple and mix until well combined. Add flour mixture. If batter seems too dry, add a few Tablespoons of reserved pineapple juice.

Pour batter into a 13 x 9-inch baking pan coated with non-stick cooking spray. Bake at 350°F for about 30–35 minutes or until a wooden pick inserted in the center comes out clean. Cool completely on a wire rack.


FROSTING:
8 oz. cream cheese*
2 Tablespoons butter, softened
1-2 Tablespoon reserved pineapple juice
½ teaspoon vanilla extract
3-½ cups powdered sugar

* Make sure cream cheese is cold. The frosting will be too thin if you use room temperature cream cheese.

1. In an electric mixer fitted with a paddle attachment, mix together cream cheese and butter until smooth.

2. Add powdered sugar, pineapple juice and vanilla. Beat on low until fluffy.

3. Spread evenly over cooled cake.

Isn't she cute? (okay, I might be a teeny, tiny bit biased) :)

I can't believe she's going to have her half birthday in less than two weeks! She's growing waaaay to fast.

I spent a lot of time with our clothes today...folding, putting away and boxing up. It's officially fall and I needed to put away all the summer stuff and/or clothes that the kids have grown out of.

Speaking of fall, today was a the perfect fall day...warm sun on a cool day. The leaves are already changing color and falling (into our yard!)


The kids thought they would rake up all the leaves so they could jump in the pile...as you can see, we didn't have quite enough for that :)

I love fall!

One of those days

Today was one of those days where the kids were constantly fighting, being disobidient and pushing every single one of my buttons.

One of those days where the kids argue with me about everything, throw tantrums and have major meltdowns.

One of those days where my patience runs low and the pitch in my voice is high.

One of those days where a looney bin is more sane than this house.

Yep, one of THOSE days.

But then, miraculously, they all took naps and I had a quiet house. My mind began to de-fog and my soul began to calm. And then at dinner time, it started all over again.

Once the kids were in bed, my husband and I folded laundry together and shared some laughs. Laughter is such a powerful thing. It's even better when you share those laughs with the one you love. So, we ended the day on a positive note and that's a good thing.

You may have noticed my lack of photos lately...my camera went haywire and stopped reading the SD card, so I'm unable to download the pictures. We just got a new card, so that will all be changing.

Our TV bulb also went out, so we have no TV until the new bulb gets here. It might be good to take a break from TV for a while.

Last week the car battery died and the dishwasher wouldn't drain.

I guess it's just been one of those weeks.

Random Thursday

Today, I have a sick kindergartener at home...boo! He puked in the car on the ride home from dropping off Sweet Pea at preschool...double boo!

My sweet friend, Jessica, came over for coffee this morning...yay!

I've been spending a lot of time in the kitchen and I have some fun recipes to share...tomorrow.

For now, I have tons of laundry to fold. Need to clean up the garden. And snuggle with my boy.

Monster Knee Patch

Last week I shared some inspiration from Pinterest. One of the ideas was patching a knee with a fun monster face. So, this weekend, I did just that.

It came from Living Locurto and I think it's BRILLIANT! Here's how mine came out...


I used felt and hand-stitched it all around



I realized, after the fact, that he's just about outgrown these jeans anyhow. Oh, well.

First ever glass etching project

I've been wanting to try glass etching for a while and after finding this pretty little jar at Goodwill, I thought it was the perfect opportunity to give it a try. And it was really easy with instant gratification results...my kind of project :)

I started with my glass jar and some adhesive stencils


and etching creme


I placed the stencil over the glass and painted a thick layer of the creme over it


I waited about a minute or two, then wiped off the creme with a damp washcloth. And the end result...



It was really easy. Now, I'm on the lookout for more things to etch :)

Maple Syrup in a Pinch

The other morning, the kids wanted to make chocolate chip pancakes. "Sure! I have all the ingredients...let's do it!"

So we made the pancakes and then realized we had NO SYRUP! Luckily, my mom gave me a recipe years ago for a quick, thick syrup and it saved us!


INGREDIENTS:
2 tbsp. water
1/4 c. sugar
1 1/2 c. corn syrup
1/2 tsp. maple flavoring

Place all ingredients in a small saucepan and bring to a boil. Boil for 2 minutes. Pour hot syrup right over your pancakes or waffles...mmm!

Store in a jar with a tight fitting lid. Can be reheated in the microwave.


Super duper easy and really good!

UPDATE: I just found out this recipe originated from the back of the Mapleine (maple flavoring) box. I just purchased a new box and, low and behold, there it was!

No more lazy days of summer

Whew! The last few days have just been whizzing by! This Fall routine stuff is taking me some time to get to used to. Running to and from school, meetings, appointments, trying to squeeze in a workout and trying to get the baby to nap. She's been taking 45 minute cat naps throughout the day...mostly in the car. Doesn't she know I have things to get done? HA!

I can't believe how big these kiddos are getting!

First Day of Preschool and a Bad Haircut

Today was Sweet Pea's first day of preschool. It seems like she was just born...how can it be that she is off to school already?



I was a little worried, since she woke up crabby, that it was going to be a hard morning but she did great! I think having an older brother to show her the ropes has worked to her advantage.



Such a smart cookie. I think she's really going to love it.

Aaaand, as you can see, mommy gave her a little haircut...the day before school. I'm sure there is a rule somewhere that states you're never supposed to cut your child's hair the day before school or the day before school pictures because it never turns out well. And our case was no different.


It's a little uneven to say the least.


I can do a lot of things, but cutting hair? Well, I can do it, but not well!

She could care less about what it looks like, but we will be going to a professional to get it cleaned up...soon!

First Day of Kindergarten

Today, the boy started Kindergarten! It's big time. The real deal!

To make the day special, I made Apple Crisp for breakfast...


with whipped cream, of course...


He would've rather just squirted the whipped cream in his mouth, but I had to draw the line somewhere.

He was beaming. He walked in there, made himself at home and acted like he'd been doing it for years. It was an exciting morning and I'm so proud of him.

Tomorrow will be Sweet Pea's first day of preschool...we'll see if that goes as smoothly.
