Maple Syrup in a Pinch

The other morning, the kids wanted to make chocolate chip pancakes. "Sure! I have all the ingredients...let's do it!"

So we made the pancakes and then realized we had NO SYRUP! Luckily, my mom gave me a recipe years ago for a quick, thick syrup and it saved us!


INGREDIENTS:
2 tbsp. water
1/4 c. sugar
1 1/2 c. corn syrup
1/2 tsp. maple flavoring

Place all ingredients in a small saucepan and bring to a boil. Boil for 2 minutes. Pour hot syrup right over your pancakes or waffles...mmm!

Store in a jar with a tight fitting lid. Can be reheated in the microwave.


Super duper easy and really good!

UPDATE: I just found out this recipe originated from the back of the Mapleine (maple flavoring) box. I just purchased a new box and, low and behold, there it was!

I've never before seen a recipe for maple syrup, thanks! Is maple flavoring just maple extract? Do you go to a specialty store for that?

They sell it in the spice section at any regular grocery store with all the extracts. I buy one called Mapleine, but maple extract would probably work just as well.

I've made syrup without the corn syrup. Not as thick but still works. Use twice as much sugar than you do water, then add the maple flavoring. Once or twice my mom even used walnut flavoring instead of maple. YUM!

I sometimes make a white sugar/water/maple flavoring syrup, but you have to boil it for a long time to get it syrupy..about 230 degrees I think is what you want to get it. (I read that off my candy thermometer)
I've also used just brown sugar and water. It works great. No maple flavoring needed really. The only problem I have with making homemade syrup (which I do all the time now) is that half of it turns to hard rock candy in the bottom of the container before I get to use it all. Oh well. It's still much cheaper than buying syrup. :)

I remember making this when I was a teenager at home. I'd forgotten it. Thanks for posting it! I'll have to try it again.
