Pumpkin Spice Oatmeal Cookies

Soooooo, today is the first day of autumn...YAY! And to celebrate, I'm sharing one of my favorite cookies (with a twist)!



Are you sick of my pumpkin posts yet? Sorry. I just can't help myself.

These cookies are a variation of the ones that I usually make with chocolate chips, however when I saw these little gems...


I knew I had to shake it up.

And let me tell you...they are GOOOOOOOOD!!! They are chewy (and stay chewy for days) and are not overbearingly pumpkiny.



Let's make them, shall we?

INGREDIENTS:
1 c. (2 sticks) butter, at room temp
1 c. packed brown sugar
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla extract
1 1/2 c. flour
1 tsp. baking soda
1 tsp. pumpkin pie spice
1/2 tsp. salt
1 c. rolled oats
1 c. pumpkin spice morsels

DIRECTIONS:
Heat oven to 350 degrees
In a mixer fitted with a paddle attachment, beat butter and sugars until creamy.
Add eggs and vanilla. Mix well.
Add flour, baking soda, pumpkin pie spice and salt. Mix well.
Mix in oats.
Stir in pumpkin spice morsels by hand.
Using a medium-sized cookie scoop or spoon, drop rounded scoopfuls of dough on a cookie sheet.
Bake in preheated oven for 10-12 minutes or until golden brown.
Let cool for 1 minute and transfer to wire rack.
