WEDNESDAY: Chicken Taquitos. Served with Southwest Salad (bagged mix from produce section)

THURSDAY: Baked potato bar (our favorite toppings are: bacon, cheese, broccoli, jalapenos, sour cream/yogurt, leftover taco soup, chili, taco meat or chicken and salt & pepper).

To prepare potatoes, I rinse them, poke each one with a fork and wrap each in a paper towel. Then I place in the microwave and cook on my "potato" setting (approx. 7-8 minutes for 4 potatoes, depending on size). Potatoes can also be cooked in the oven or slow cooker.
FIRDAY: Pasta Casserole Bake (Pastitsio). Served with salad. I follow the linked recipe, but to make it quick and easy, I use our favorite store bought marinara sauce.
