Winter Meal Plan

Stuck in a recipe rut? Looking for new recipes to try? Here are some ideas and what we're having for dinner this week:

MONDAY: Potluck with friends. Thinking about making Pioneer Woman's Broccoli Cheese Soup or getting a sliced ham for sandwiches.

TACO TUESDAY:  Taco Soup. Served with tortilla chips.

Quick and easy taco soup...would be good with chicken too!


WEDNESDAY: Chicken Taquitos. Served with Southwest Salad (bagged mix from produce section)

THURSDAY: Baked potato bar (our favorite toppings are: bacon, cheese, broccoli, jalapenos, sour cream/yogurt, leftover taco soup, chili, taco meat or chicken and salt & pepper). 


To prepare potatoes, I rinse them, poke each one with a fork and wrap each in a paper towel. Then I place in the microwave and cook on my "potato" setting (approx. 7-8 minutes for 4 potatoes, depending on size). Potatoes can also be cooked in the oven or slow cooker.

FIRDAY: Pasta Casserole Bake (Pastitsio). Served with salad. I follow the linked recipe, but to make it quick and easy, I use our favorite store bought marinara sauce.


SATURDAY: Out

SUNDAY: Leftovers
