Gifts from the Kitchen: Hot Buttered Cider

There's nothing like a warm drink on a cold day to warm you from the inside out. Today I'm sharing a yummy drink that is easy to make...Hot Buttered Cider (or Rum) Mix.

This makes about 10 cups of concentrated mix so it makes enough to give away! It would be a great gift for neighbors, teachers and co-workers.


INGREDIENTS:
2 cups butter (1 pound), cubed
2 cups packed brown sugar
4 1/4 cups powdered sugar
1.5 quart vanilla ice cream, softened
1 Tbsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves

DIRECTIONS:
In a pot, over medium heat, melt butter.Cubing the butter helps it to melt faster.
Add sugars and whisk until dissolved.
Remove from heat.
Add ice cream and spices; whisk until completely incorporated.
Spoon batter into individual containers.
Store in the freezer.

To serve, mix 1-2 tablespoons of mix with 1 cup hot apple cider and 1/4 cup hot water.Garnish with a sprinkle of cinnamon.

For Hot Buttered Rum, stir in 1-2 tablespoons of mix with 2 Tbsp. spiced rum and 1 cup hot water. Garnish with a cinnamon stick.
