Scotch-a-Roos and a Campout

Last night my big 6 year old boy had his first sleepover at a friend's house. It's hard to believe he old enough to be going to sleepovers! He's growing up so fast.


He had an awesome time...video games, pitching a tent and staying up SUPER late with his best buddies!

So, with just the girls at home this morning, Little Miss Sweet Pea and I made Scotch-a-Roos! Here's what you'll need if you'd like to make these highly addictive, chewy & crispy little bites of heaven:



Ingredients

  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup peanut butter
  • 1 tsp. vanilla
  • 6 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate morsels
  • 1 cup butterscotch chips

Directions

1. Place corn syrup and sugar into a saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter and vanilla. Mix well. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.

2. Melt chocolate and butterscotch chips together in small saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into 2 x 1-inch bars when cool.
NOTE: You can cut the recipe in half to fit into a 9x9 pan.
I'm not a big fan of marshmallow creme, so I never liked regular Krispy Treats. But I love peanut butter, so these are perfect!
