I adapted this recipe, that I got from my friend Nicole, and it is ALWAYS a hit. There are never leftovers. I've had lots of requests for the recipe, so here it is!
INGREDIENTS:
1 (11oz) can white shoepeg corn, drained & rinsed
1 (15oz) can black beans, drained & rinsed
1 (10 oz) can Rotel tomatoes, with juice
2 ripe avocados, diced
2/3 c. red onion, chopped
1/4 c. olive oil
1/4 c. red wine vinegar
2 cloves garlic, minced
3/4 tsp. salt
1 tsp. cumin
2/3 c. cilantro, chopped
a few dashes of tabasco (optional)
Combine all ingredients, adding avocados last, and toss gently. Serve with chips.
I normally don't use the tabasco since the Rotel tomatoes add a little spice, but if you like extra spice...go for it!
NOTE: my store was out of shoepeg corn, so I used canned yellow corn and still turned out great! If you don't have black beans, use black-eyed peas, or whatever you've got! Or if you have a plethora of fresh tomatoes from your garden, use those instead of the Rotel. It's a very versatile recipe and can be adapted to your liking.

YUM!! I love cowboy caviar. I will have to try your version too. It seems like everyone has their own version that makes it just a little bit different. I've never had one with avocado in it.

There is a tasty recipe on the back of the Aldi's brand restaurant style tortilla chips that is similar to this (that's why this one caught my eye!), but with more beans, and NO tomatoes (of course you could add them if you wish). We didn't think we'd like it but we can't get enough of it! So thanks for posting this! We will definitely be trying it!
Oh my goodness this was so good and made a huge hit with the potluck I took it to. Its so good, you can eat it with a spoon! Yum! Highly recommended
I made this and it is so good! I don't like avacados so I like to use chopped black olives instead, and I use chopped green onions instead of the red onion. And just a tip, this dip is soooo much better the next day or two after you make it, when the flavors have had time to meld together. Yummy~!
I made this for the Superbowl 2012 "Go Giants" It was a touchdown!
I added some fresh tomatoes (for color) and about 1/4c of green onion. Other then that followed the recipe to the T.

I have made one similar to this but def want to try yours. Never thought of red wine vinegar but love it. However when I smoke my meat I throw lots of corn on the cobs on there also as well as cook black beans (which I soaked over night) onions, basically everything over the smoke. It is so good. A lot of work in a way but love the smoke taste. Since I grow my own tomatoes I have an abundance of them. But if I was to use canned. Those are my favorite.
I must tell you - I found this recipe on Pinterest one night at work while looking for something to bring to our potluck. Well, since then I've made it at least 10 times and my co-workers make up "family dinner" nights and the like just so I'll bring this in. It is so freeking good!

I make something VERY similar to this, only I add chopped tri-colored peppers, black olives and pasta (and chick peas too for extra protein). It is always the favorite pasta salad at every cookout!

if you want to add something different, look for pickled cactus (near the Mexican food @ the grocery) rinse & dice - awesome! Lime juice also adds another level

I look you use eggplant caviar, I would like to use caviar of a salmon. Whether as I buy it here https://www.red-caviar.com/ can use it?
Just made this and it is awesome. I did add some sliced black olives and used fresh squeezed lime juice in place of the red wine vinegar. Simple to make and it's not going to last very long the way I'm shoveling it down lol. Thanks for sharing and this definitely is a keeper.
